thoughts on getting 6 of us at some point to try a game where we are allowed all techs but only limit troop techs to say a short quick lvl 1 troop game, or level 2 max. would it work?

We would definitely have to have participants agree beforehand right here on the forum. Also, in order not to ruin it, have to make sure it is people who are not going to go AWOL in the middle of the game.

I think this could be fun. There are just too many units that are impossible not to get in a normal game. It just becomes a race at that point.

We would have to limit defensive techs as well though. With just comms for seige, it would not be fun if a player could just hide behind walls or max out their defensive techs and make it take ages to take over a castle.

it could be something to think of, lvl2 would include battering ramms. i agree about walls. maybe allow palisades for lvl 1. i guess we could have a think about it and maybe try it one time.
