How do U do it, because I've never lasted long enough in a game, to do so?

Make sure there are no other player's troops in the castle, then move in at least one commandeer and double click on it. You should see a button that says "Take over castle" on the right hand column. It will be at the bottom so you may have to scroll or tab down to see it.

It may take multiple turns to take over the castle if the player who currently owns it has any techs protecting it. Use multiple comms to speed up the process. You can click on the castle floor to see what percentage has been taken over so far.

PS Your commandeer must be on a gray castle hex, not in a building, like a barracks, in order for the take over button to appear.
