i have made duck a l'orange for dolphins! miami dolphins!
duck is fatty...but if you cook it upright to let the fat drip off..its not half bad... i roast them after stuffing them with quartered oranges and cinnamon sticks... served with a grand marnier sauce (shallots deglazed with grand marnier, duck stock, orange juice/zest) | | Mog DoC Joined 5/02/2004
